Pork Hamonado
Pork Marinade Ingredients
  • 2 lbs pork tenderloin
  • 2 cups pineapple juice
  • 1/2 to 3/4 cup brown sugar
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
 Pork Marinade Instructions
  1. Slice pork tenderloin thinly like tapa style.
  2. Combine pineapple juice, sugar, pepper and salt. Stir to combine.
  3. Marinate pork in pineapple mixture for at least 2 hours or overnight. Drain and reserve marinade for later.

Pork Hamonado Filling
  • 1 small can sliced pineapple, cut into small chunks
  • 3 sweet pickles, sliced into strips
  • 1 small carrot, sliced into strips
  • 1/2 cup sliced ham (optional)
  • kitchen twine for tying
  • 1/2 cup cooking oil for frying

Pork Hamonado Roll Instructions

  1.  Spread  pork and alternate slices of carrots, ham, pickles and pineapple.
  2. Roll neatly into a log and tie firmly using kitchen twine.
  3. In a wide pan, heat oil in medium heat. Fry the pork roll and brown all sides.
  4. Discard oil from frying except 1 tablespoon.
  5. Add marinade into the pan. Cover and simmer for 20-30 minutes or until meat is fully cooked. Turn meat occasionally.
  6. Continue to simmer with continuously stirring and turning the meat until desired thickness.
  7. Remove thread from the meat and slice.
  8. Pour sauce over the meat and serve hot. Enjoy!
